Spicy Vodka Sauce
Directions:
Dice the guanciale into thick cubes and place it in a cold saute pan. Turn the heat to medium, render the fat, and crisp up the meat.
Remove the meat, but leave the fat in the pan.
Add the finely chopped onion to the pan and start to brown. Once the onions have picked up some color, add the minced garlic.
Deglaze with vodka once there is a solid fond. Let the alcohol completely evaporate.
Blend the San Marzano tomatoes using a stick blender until smooth.
Pour the cream into the pan and stir until the color changes to an almost pink hue. Add salt and red pepper flakes to taste. The sauce should be slightly spicy.
Add back the cooked guanciale and mix well.
Toss the sauce with your choice of pasta, ideally one that holds sauce well like penne or rigatoni.
Ingredients:
1/2 lb of guanciale
1 small can of San Marzano tomatoes (about 4-5 tomatoes if using fresh, or a small can if using canned tomatoes)
4 garlic cloves, minced
1/2 onion, finely chopped
1/2 cup heavy whipping cream
2 tablespoons Vodka or spirit of choice
Red pepper flakes to taste (adjust based on how spicy you like it)
Salt to taste
