Mushroom Cream Sauce
Ingredients:
2 cups mixed mushrooms, chopped
olive oil
2 cups heavy whipping cream
1 shallot, finely chopped
2-3 garlic cloves
Balsamic vinegar to deglaze
a few sprigs of thyme
Salt to taste
Directions:
Coat stainless steel pan with olive oil.
Add mushrooms and cook until slightly browned.
Cook them down; avoid moving them to allow fond to form.
Add shallots and garlic before pan completely dries from mushroom juices.
Add thyme toward the end.
Deglaze with balsamic vinegar.
Add heavy whipping cream, stir.
Salt and cracked black pepper to taste.
