Spicy Sausage + Gnocchetti
Ingredients:
1/2 lb sausage
1 onion
4 cloves garlic
1 cup chicken or pork bone broth
chili flakes to taste
salt to taste
1/4 cup pasta water
2 servings of gnocchetti (or pasta of choice)
tablespoon of butter
parmesan cheese to top
Directions:
Start by browning your sausage on medium-high heat. Leave it undisturbed until brown on one side. Then flip it over and chop it into small pieces.
Add finely chopped onion and garlic.
Add chili flakes.
Deglaze with a tablespoon of bone broth and scrape the bottom of the pan to get the fond (the brown bits).
Add in the rest of the broth and cook on medium heat to reduce.
Cook pasta until al-dente (2-3 minutes).
Transfer pasta and 1/4 cup of pasta water to the pan with the sausage.
Reduce. Then add a tablespoon of butter and Parmesan cheese.
Check seasoning levels, plate, and enjoy!
