Winter Greens Pesto
Ingredients:
handful of shelled pistachios
1 clove garlic
1 bunch of dandelion greens
a handful of micro arugula
3 sprigs of parsley
handful of basil
LOTS of parmesan cheese
olive oil (enough for desired consistency)
salt to taste
2 servings of your pasta of choice
Directions:
In a food processor, blend the garlic and pistachios until smooth.
Add all of the greens and blend.
Add in olive oil and parmesan cheese and blend. Adjust these quantities based on desired consistency.
Salt to taste.
Cover until pasta is cooked.
Once pasta is cooked, remove from heat and drain. Reserve a small amount of pasta water in case you need it to loosen up your sauce.
Add pesto to pasta OFF of the heat (this will preserve the freshness of the greens). Enjoy!
